Pesto Zucchini Noodles is one of my all time favorite low carb RAEcipes! Pesto is such a fun way to switch up your pastas and proteins at home. The traditional recipe calls for garlic, but this RAEcipe is FODMAP FRIENDLY, which means better for those sensitive to high FODMAP foods. Say goodbye to that discomfort and hello to second helpings.
Ingredients:
3 zucchinis
1 lb chicken breasts
Bag of small mixed peppers
Cup Fresh Spinach
Pesto Sauce:
2/3 cup olive oil
2/3 cup parmasan cheese
1/2 cup pine nuts
1 cup basil
Salt and pepper
Optional: Red Pepper (for spice)
Instructions:
1. Use Spiralizer to transform the zucchini into ZOODLES
2. Combine all the Pesto Sauce ingredients into a food processor
3. Push high until well mixed
4. In frying pan sauté the peppers
5. Add sliced chicken breasts to peppers
6. Once chicken is cooked through, add fresh spinach
7. Add Pesto
8. Either mix noodles in or serve separate (If separate, add dash olive oil to zoodles)
