Quarantine makes you miss “normal life.” The days when you could travel without restriction and without a mask covering the hypnotizing smell of Cinnabon radiating through the airport terminals. Instead you can make these addictive Cinnamon Buns and make it kinder to the waistline with this KETO low carb version. It has the same mouth watering taste without all the chemicals or guilt.
Ingredients:
1 1/2 cups shredded mozzarella
3/4 cup Almond Flour
2 tbsp cream cheese
1 egg room temperature
1/2 tsp baking powder
Low Carb Powdered Sugar
Filling:
2 tbsp water
2 tbsp Coconut Sugar
2 tsp Cinnamon
Icing:
2 tbsp cream cheese
1 tbsp full fat greek yogurt
2 drops Vanilla Extract
Instructions:
1. Preheat oven to 375 degrees
2. Melt the mozzarella and cream cheese in microwave safe dish
3. Stir in the egg
4. Add baking powder and almond flour
5. Mix well and then smooth dough with hands
6. Divide the dough into sections
7. Form long roll with each
8. Place dough on parchment paper with another piece of paper on top
9. Flatten the dough thin with hands or Rolling Pin
10. Spread filling on flatten dough
11. Roll each into a bun and cut in half (makes two)
12. Place buns on Baking Sheet lined with parchment paper (1 inch a part)
13. Drizzle with leftover filling
14. Bake approx. 20 min
15. Remove from oven and cool until firm
16. Spread on frosting and garnish with powdered sugar
