Who doesn’t love fresh baked cookies?! I sometimes eat too much of the dough before it makes it to the oven…But nothing is better than when they come out hot and gooey. These Almond Flour Chocolate Chip Cookies remove the gluten and reduce the carb count. Have your cookies and eat them too!
Ingredients:
1/2 cup butter, melted
1/4 cup Coconut Oil
2 large eggs
2 tsp Vanilla Extract
3/4 cup Coconut Sugar
3 cups Almond Flour
1/2 tsp Baking Soda
1 1/4 cup chocolate chips
2/3 cup walnuts or pecans
1/2 tsp salt
Instructions:
1. Preheat oven to 350 degrees
2. Line Cookie Sheet with parchment paper
3. Melt butter
4. In a mixing bowl, add coconut oil to butter
5. Add eggs and whisk together
6. Mix brown sugar and vanilla extract
7. Add baking soda and salt
8. Add almond flour one cup at a time, mixing well in between
9. Stir in chocolate chips and nuts of choice
10. Roll 2 tbsp dough into balls evenly spaced out on cookie sheet or use small scooper to place them
11. Bake for 12 min or until golden brown
12. Let them sit on baking pan 2 min (will continue to cook)
13. Move to cooling rack
14. Serve warm with milk of choice
